Tataki Dish with Beef Fillet, Potato Crisps, Pickled Silver Onions, Miso Mayonnaise, and Västerbotten Cheese

Ingredients:

  • 400g beef fillet
  • 1 cup potato crisps (homemade or store-bought)
  • 1/2 cup pickled silver onions
  • 1/4 cup chopped fresh parsley (for garnish)

For the Marinade:

  • 1/4 cup soy sauce
  • Zest of 1 lemon
  • 2 cloves garlic, minced

For the Miso Mayonnaise:

  • 1/2 cup mayonnaise
  • 2 tablespoons white miso paste
  • 1/4 cup finely grated Västerbotten cheese

Instructions:
Marinate the Beef:
In a bowl, mix soy sauce, lemon zest, and minced garlic to create the marinade.
Place the beef fillet in the marinade, ensuring it is well coated.
Allow the beef to marinate for at least 30 minutes, preferably 1-2 hours in the refrigerator.

Make Miso Mayonnaise:
In a small bowl, combine mayonnaise, miso paste, and finely grated Västerbotten cheese. Mix well until smooth. Adjust the ratio to your taste.

Prepare Pickled Silver Onions:
Slice silver onions thinly and place them in a bowl.
Squeeze fresh lime juice over the onions.
Let them marinate for at least 30 minutes to develop flavor.

Potato Crisps:
Use store-bought or make your own potato crisps. If making from scratch, thinly slice potatoes and deep-fry until golden brown.
Drain excess oil on paper towels and let them cool.

Grill the Beef:
Heat a grill or grill pan to high heat.
Remove the beef fillet from the marinade and grill for about 2-3 minutes on each side, or until it develops a seared crust.
The goal is to sear the beef on the outside while keeping the center rare.
Once grilled, let the beef rest for a few minutes.

Slice and Assemble:
Thinly slice the grilled beef fillet.
Arrange the beef slices on a serving platter.
Drizzle some of the remaining marinade over the beef slices.
Spoon the miso mayonnaise over the beef.
Scatter pickled silver onions and potato crisps over the top.
Garnish with chopped fresh parsley.

Serve:
Serve immediately, allowing your guests to enjoy the contrasting textures and flavors of the Tataki dish. Excellent with a glass of Sparkling Skepparp Rosé

This Tataki dish brings together the richness of beef, the crunchiness of potato crisps, the tanginess of pickled silver onions, and the umami depth of miso mayonnaise with Västerbotten cheese, creating a culinary experience that is both elegant and delicious.
