White Wine - Full-bodied and tasty
Nuanced, fruity and fresh taste with hints of green apples, pears, pineapple, honeydew melon and lemon. Lotima Murella is our first semi-dry wine from the 2020 harvest. We have always dreamed of creating a wine that can be matched with Asian, spicy and slightly umami-based food and now the wine is finally here. The grapes were harvested by hand at the beginning of October 2020 and a small part of the harvest was infested
of the fungus botrytis cinerea; noble rot. In order not to contaminate the must with botrytis the grapes were de-stemmed and pressed whole. The juice settled 1 day before fermentation started. As the noble rot resulted in a higher sugar number, we could deliberately stop the fermentation on a residual sweetness of 8 g/L using cooling. After fermentation, the Solaris wine was stored in steel for 12 months of which 6 months sour lie. The wine was bottled in June 2022 and will be launched in the spring 2023. Thanks to the grapes being grown in a cold climate, a healthy acidity is maintained that balances out residual sweetener. Our goal is that the wine is produced in the vineyard and that small corrections can be made in the winery, resulting in a minimal use of additives and processing aids in ours wines.
